Simple Chicken, Sweet potato, and Asparagus Dinner

Despite living in a country with amazing food, Jonny and I try to have home cooked meals as often as possible. We love Korean food, going out for dinner,and exploring new restaurants. Even still, we both see the value in cooking for ourselves, experimenting with new recipes, and how it brings us closer together as a couple.

Sometimes we make a full meal together, and other times one of us will just take the reigns and surprise the other. It’s not just about cooking, it’s about creating something together, learning to co-operate, and sharing the (hopefully) tasty results! We even ‘criticize’ our meals while we chow down on them, thinking about what worked, and what needs improvement. Needless to say, we are ‘Foodies’ and proud to be labelled so.

This post is simply a place to share our recipes, ideas, and thoughts regarding home cooked food.

Last night we made a simple, yet delicious chicken meal. I skinned and cubed two sweet potatoes, drizzled them with olive oil, and added some salt and fresh Cambodian ground pepper (the freshest pepper I have ever had!). I threw the potatoes in the oven for about 25 minutes and they cooked quite nicely, but I increased the heat and let them cook for another ten minutes to give them a crispier outer shell.

Jonny steamed two chicken breasts which he lightly seasoned with lemon juice, salt, and of course pepper. He added a small package of frozen asparagus to the same pan and let them steam. Then he drained the water out and finished cooking both the chicken and asparagus. Plus he added some sliced garlic and ghee to the asparagus.

The result was a simple, yet very delicious meal! The chicken was still tender, yet slightly browned on the outside. The buttery taste of the ghee and the browned garlic was a perfect topper for the asparagus. Oh and dem potatoes were perfectly cooked! They almost tasted like cubed sweet potato fries, yum!

Now, I know this isn’t a very creative meal,  one may even call it basic. Admittedly it is and that’s okay. It’s amazing how a few simple ingredients can bring out the flavor of something instead of masking it. I want my chicken to still taste like chicken when I take that first bite, not a sauce or solely it’s spice. Jonny is a little bit different as he is 100% a sauce kind of guy, yet he can still appreciate a meal such as this one. I think it is important to post about these basic meals to remind ourselves that home cooked meals can be simple and require very few ingredients.

So, if you are ever feeling a little lazy, want a quick and easy meal with minimal cookware (1 frying pan and 1 baking sheet), then maybe give this a try!

Of course, no proper meal is a meal without a nice red wine on the side! We enjoyed a Chilean Cabernet Sauvignon called Cono Sur: Bicicleta.
