Perfecto Pita Pizzas

Tonight was our last proper meal with Jonny’s aunt Jen and her boyfriend Tom before they leave for Mexico and we leave for Australia. We decided to make pizza using pita bread as a crust, and a lot of new creative toppings.

For an appetizer, I made homemade hummus and cut up carrots, red peppers, snow peas, and cucumbers for dipping while Jonny made homemade pizza sauce using canned crushed tomatoes, rosemary, garlic, thyme, pepper, and salt. Afterwards, he pan fried a chicken breast, made caramelized onions, and delicious mushrooms which were later used as pizza toppings. As he did that, I made a fresh salad containing cucumbers, red and orange peppers, apples, walnuts, and dates topped with olive oil and balsamic vinegar.

Once our appetizer and salad was ready to go, it was time to make our pizzas! We decided to make 6 pizzas for the four of us which meant that we needed to get creative with our toppings. Here is what we made for each pizza:

  1. Spinach, chicken and artichoke
  2. Brie, apple, arugula, dates and pesto sauce
  3. Chicken, bacon and arugula
  4. Olives, feta, onions, and tomatoes
  5. Onions, chicken and chill pepper flakes
  6. Spicy mushroom, purple onion and garlic

The pizzas were thrown in the preheated oven at 425 degrees for 8-10 minutes. They all turned out beautifully. Tom and Jen loved our creativity and the excitement of trying 6 different pizzas in one meal certainly added to the experience.

We love to cook. Jonny and I do it as a team and it really does bring us, and our guests who try our food, together. Part of this blog is to share our love for food, cooking, and trying new recipes. We hope that it encourages others to cook their own meals, spend time with loved ones doing it, and reaping the amazing results of appreciating good, fresh, and wholesome dishes.
